Egg Nog Pound Cake

Egg Nog Loaf / Tube Cake

 

Heat oven to 350 degrees.

Grease or spray well with baking spray 1 loaf pan.

1 stick of butter (soften)

2 eggs

¾ cups sugar

¼ teaspoon salt

3 teaspoons baking powder

½ teaspoon each nutmeg and cinnamon

1 teaspoon rum flavoring (more if you want)

¾ cup egg nog

2 cups all purpose flour

½ cup chopped pecans (opt.)

 

Beat with electric mixer the first 7 items above until well mixed.  Add 1 cup of flour and half of the egg nog and mix well.  Add the remainder of the flour and egg nod and beat until smooth, mixture will be thick.  Put mixture in the loaf pan spreading to make even.  Sprinkle pecans over the top and bake 30 minutes or until tooth pick inserted into cake comes out clean. 

 

You can make a glaze of powdered sugar, rum flavoring, cinnamon and nutmeg, water.

 

 

 

 

I added the remarks about the sauce too!  I am using this on the Egg Nog Loaf Cake. (I cut it into squares)  Be sure and add a little more Egg Nog to the cake recipe.  I found it too thick and it took too long to cook.

RUM SAUCE

INGREDIENTS

·     2 tablespoons butter

·     1 tablespoon cornstarch

·     1/2 cup sugar

·     1 cup milk

·     3 tablespoons white or dark rum

DIRECTIONS

1.   Melt butter in a small saucepan over medium heat. Mix together the sugar and cornstarch, and stir into the butter. Pour in milk, and cook stirring frequently until the mixture begins to boil. Continue cooking until thick, stirring constantly. Remove from heat, and stir in rum. Serve warm
